Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/3 cup hot water
- Vegetable oil for deep-fat frying
Instructions
- PREP:
- Get out a cast iron fry pan.
- Combine the flour, baking powder and salt and stir in the hot water to form a soft dough.
- Cover and let stand for 30 minutes. It will still be warm to the touch.
- Divide the dough in three, each piece to form a large, flat, pancake—quickly so as not to overwork the dough.
- FRYING THE FRY BREAD:
- Heat about an inch of vegetable oil to 375°
- Lay pieces of dough in the skillet- they will immediately puff up a bit.
- Turn them over as they turn golden brown—about 30 seconds—using a strainer meant for frying.
- Remove them to drain on paper towels as soon as the other side became golden.
